Mediterranean Quinoa Salad
 

Mix together

  • 1 cup cooked quinoa
  • ½ cup cubed cucumber
  • ½ cup cherry tomatoes (cut in half)
  • 3 tbsp finely diced red onions
  • 3 Tbsp freshly chopped mint, cilantro, dill, and basil

Whisk together

  • 3 Tbsp. freshly squeezed lemon juice
  • 1 Tbsp. olive oil, and
  • 1 finely minced clove of garlic

Pour the dressing over the salad and mix well. Add sea salt to taste.
