Mix together
- 1 cup cooked quinoa
- ½ cup cubed cucumber
- ½ cup cherry tomatoes (cut in half)
- 3 tbsp finely diced red onions
- 3 Tbsp freshly chopped mint, cilantro, dill, and basil
Whisk together
- 3 Tbsp. freshly squeezed lemon juice
- 1 Tbsp. olive oil, and
- 1 finely minced clove of garlic
Pour the dressing over the salad and mix well. Add sea
salt to taste.
